Tom's Meat Loaf
Preheat oven to 350 F. Spray a 9-by- 5-inch loaf pan with olive oil-flavored cooking spray. In a large bowl, combine meat, mushrooms, onion, olives, Parmesan cheese, bread crumbs, 1 teaspoon JO's Pizza Seasoning and 1/3 cup tomato sauce. Mix well to combine. Pat mixture into prepared loaf pan. Bake for 45 minutes. Stir parsley flakes and remaining 1 teaspoon JO's Pizza Seasoning into remaining 2/3 cup tomato sauce. Spoon sauce mixture evenly over partially baked meat loaf. Cut mozzarella cheese slices in half diagonally. Evenly arrange cheese pieces over top. Continue baking for 15 minutes. Place meat loaf on a wire rack and let set for 5 minutes.
