A little help with holiday madness

The holidays are upon us and schedules are becoming hectic. Trying to fit 48 hours of activity into 24 hours doesn't seem to be working too well!

Judith Morseth, a South Alabamian customer, suggested that we publish a column with quick-fix recipes and supplied our first entry, guaranteeing that it is quick and good. If you have a recipe to share, please send it to: The South Alabamian, P.O. Box 68, Jackson, AL 36545.
Potato Soup
1/4 cup butter
1/4 cup chopped onion
1/4 cup flour
1 can (14.5 oz.) chicken broth
1 can (12 oz.) evaporated milk
2 large potatoes baked or microwaved

Melt butter, add onion and cook until onions are tender,

about 1-2 minutes.

Stir in flour, gradually stir in broth and milk. Scoop potato

pulp from one of the potatoes and mash (reserve the potato skin). Add pulp to broth mixture. Cook over medium heat until mixture comes to boil. Dice remaining potato and add to soup with other potato skin and heat thoroughly. Sprinkle with cheese, bacon, etc.
